It would be unusual to have any kind of a shop within a castle. Do you have store within you house? The castle would probably have a butcher as part of their kitchen staff, but he would not be selling to the people within the castle.
There would also be little reason to have a shop in the fields. No customers (remember they did not have cars). And anyone who lived out of town raised their own livestock and butchered it themselves.
A butcher shop (like any shop) would be located in the town, where there were customers and people could not raise their own livestock. It was also common to find meat markets next to large temples, as most religion required animal sacrifices, and then much of meat from those were sold to help fund the temple.
